Perfect 2lb Filet Mignon
- Preheat oven to 450
- Trim excess fat off the roast - save for later
- Rub roast with olive oil, salt, pepper, garlic. Put in roasting pan
- Place in oven and bake for 15 minutes @ 450
- Reduce heat to 325 and bake for 20 more minutes
- Take out, let rest for 5 mins, slice it up. Serve
Morning after steak/egg/potato mix
- Smash flat leftover baked potatoes
- (optional) dice up some jalapenos
- Excessively butter nonstick pan
- (optional) Add diced jalapenos to pan
- Place flattened leftover baked potatos potato-side-down on buttered pan
- Place diced leftover steak in pan with potatoes.
- Cook on medium heat until browning occurs on underside of potatoes
- Crack 3 eggs into pan with potatoes, steak, and jalepenos. Turn heat to medium-low.
- Scramble until it looks perfect. Serve with copius amounts of your favorite hot sauce.
Perfect brussel sprouts
- Halve and de-stem your brussel sprouts. Remove any loose leafs and add to nonstick pan
- Dice one whole onion finely, add to pan with brussel sprouts and mix.
- Add 2 1/2 tablespoons butter, put knob in center of pan.
- Mix a generous portion of olive oil in with onions and brussels. Mix to coat.
- Add generous portions of salt and pepper with onions and brussels.
- Cook on very low heat stirring occasionally for 30-40 minutes. Onions should never go past yellow color. Sprouts should never burn.
